A good taco shouldn't be a hard thing to find. Go to any Mexican restaurant. Go to any dive bar. Go to any fast food joint. Everyone serves tacos. But, unfortunately for us, they aren't good tacos.
Fresh, healthy ingredients. Authentic spices. Fresh, scratch-made tortillas. Marinated, slow-cooked proteins. The recipe is simple, but as the market for hand-made tacos will show, execution is tough and takes dedication to quality that few restaurants possess.
A good taco should have some carmelization on the fresh tortilla, from the thoughtful and intentional application of heat. It should showcase extraordinarily fresh ingredients, including, but not limited to, cilantro, lime, heirloom tomatoes, Spanish onions, tomatillo, perfectly-ripened avocado, freshly-grated cotija or queso fresco, and well-seasoned, quality proteins. And it should be quick and accessible to those in a hurry for a nutritious, inexpensive, and fresh meal.
